Smyth - Chicago
A creative, innovative tasting menu, loosely based on American cuisine. Only a few mind-blowingly good dishes, but everything was tasty. Very unboring - and that’s a compliment

The French Laundry - Yountville
French cuisine that is inspired by American comfort foods. More traditional than cutting-edge, but consistently delicious, and with impeccable service

Taïrroir - Taipei
Playful reimaginations of Taiwanese cuisine and food staples at a fine-dining level. Many delightful dishes, but also some that didn’t work as well

JL Studio - Taichung
An educational, creative journey through the many cuisines of Singapore, reimagined at a fine-dining level. Only a few standout dishes, but everything was very tasty

Gion Sasaki - Kyoto
Surprisingly bold flavors and inventive combinations of ingredients made for a stellar meal of Japanese Kaiseki. Watching the action in the large open kitchen was an additional treat

SingleThread - Healdsburg
Seasonal Californian cuisine with heavy Japanese influences. For the most part very good, some dishes were outstanding. The service was very rushed, unfortunately

Xin Rong Ji (Xinyuan South Road) - Beijing
Elegantly presented, flavorful Chinese cuisine served in luxurious modern surroundings. The best Chinese food I’ve ever had in China

King’s Joy - Beijing
The world’s first vegetarian three-star restaurant serves delicious Chinese food. Vegetable-driven and varied, the kitchen creates novel dishes rather than replacing meat in existing ones

Taian Table - Shanghai
European cuisine meets Asian ingredients and inspirations. The oft-changing menu made for an enjoyable meal, but did not have any truly stand-out dishes

Ta Vie - Hong Kong
French Mediterranean cuisine plus Japanese influences equals many delicious dishes. Add intentiveness, a bit of whimsy and a friendly, down-to-earth chef and you have a delightful dinner

Eleven Madison Park - New York
Seasonal vegetables and fruits shine in a creative menu that’s full of big flavors and consistently delicious. All the more impressive since all dishes are vegan

Le Bernardin - New York
Perfectly prepared seafood and delicious sauces. It was in the combination that the execution sometimes faltered, leading to several underseasoned dishes. A step down from our previous visits

Lakeside - Hamburg
Many excellent dishes, great service and a fantastic view of Hamburg’s skyline are all good reasons to visit and to overlook the few issues: some dishes that don't work as well, and the lack of a common thread in the tasting menu

Alois - Dallmayr Fine Dining - Munich
Seventeen small bites using produce from Dallmayr’s flagship store right under the restaurant. Never boring, and for the most part very tasty

JAN - Munich
Some amazing seafood dishes, and impressive technical cooking, but not every dish was a success for us. Hopefully the uneven service was just a one-off

Mühle - Schluchsee
Delicious, light seafood and meat dishes in Germany’s Black Forest. Ingredients could be more local, and salt used less enthusiastically, but otherwise this is definitely worth a stop

Makimura - Tokyo
One of the world’s hardest to reserve three-star restaurants was also one of its most charming. A cozy atmosphere akin to a mom-and-pop shop, and many excellent dishes made us almost forget the few letdowns

Maeda - Kyoto
Delicious, novel takes on traditional Japanese dishes. And even better, counter-seating with a wonderfully relaxed and friendly atmosphere.

Hyotei - Kyoto
An old-style tea house is the setting for a traditional Kaiseki cuisine that has very few nods to modernity. A pleasant dinner, but overall too light on flavors for three stars.

Mizai - Kyoto
Mostly traditional Kaiseki cuisine that is enjoyable, but didn’t include any real standout dishes. More impressive is the patience of the customers who made reservations over a year ahead of time
